Bridgeport High Alumna Carrington Riggs Launches "Simply Grazing WV" Charcuterie Board Business

Holidays, celebrations, traditions, and encouragement all have one thing in common: Food. 
 
 For 2013 Bridgeport High School graduate Carrington Riggs, that theme, along with the pandemic, has created a business that is, well, delicious.  Riggs began making her family candy and traditional charcuterie boards during quarantine. She and her brother would plan different themes each weekend and she would make a charcuterie board to go along with the theme.  
 
Although traditional charcuterie boards are made up of meats and cheeses, her company, Simply Grazing WV, has put their own twist on the concept.
 
“The more I made the board, I found that I really enjoyed it and it’s a great escape from the pressures of attending law school,” said Riggs. “Although I have been making them for friends and family, I decided to start the business so others could enjoy the creations as well.”
 
There are three different sizes available: an 8”box (for two people); a 10” round board (for 2-3 people); and a 14’x10” board that serves 4-5 people. Although she has a wide variety of themed creations, she can also customize them for specific requests.
 
Since the idea was born during a pandemic, it only fits that some of the charcuterie boards also cater to some of the changes made because of COVID-19.  
 
For instance, Trick or Treat will be very different this year, so Riggs has created Trick or Treat-themed boards that feature candy and novelty items. She also created a fall-themed sweet-and-salty board a fast food board, a S’mores Night one to enjoy by the fire and one that features sundae ingredients that would pair perfectly with Netflix.
 
Not all of the boards are sweets-themed, however. Because the West Virginia Italian Heritage Festival was unable to happen this year, she has made boards that encourage celebrating the festival spirit at home. Additionally, she offers a Wine and Cheese Night board complete with olives and spreads. Traditional meat and cheese boards are also available. 
 
“If someone has an idea for a board, I can create it,” she said.
 
All of her current selections are pictured along with prices on the Simply Grazing WV Facebook and Instagram pages. Orders can be placed directly from the sites as well.
