The Grapevine: Some Thoughts as We Head into Fall from Cool Weather to Andy Lang's Vegetable Soup

If you need to be convinced that fall is here, I will share a few thoughts with you.  During a recent early morning on my ride home from church, I noticed the beautiful plush green trees had a tint of color to them. This is what those cool nights do to them.
 
I imagine that it will not be long until our beautiful fall colors will be in full bloom.  Another sign of fall is those cool mornings.  I love to take my coffee out on the deck early in the morning, but now I find that I must use my Yeti to keep it hot and I feel a little more comfortable if I bring a throw out to cuddle under.  
 
I was at the Clarksburg Farmers Market about 8:30 a.m. recently and I really needed a jacket. Another sure sign of Fall are the football games and a reminder, is to be sure and dress warmly.  When the sun goes down the temperature drops.
 
Fall also changes our style of eating.  We crave those heavier dishes such as minestra, Pasta e Fagioli, and all those wonderful soups.  I have to admit that some of the best vegetable soup I have eaten was made by my son-in-law Andy Lang.  He made it from scratch, and it had a wonderful taste.  In the next couple of weeks.
 
I want to try a broccoli soup from a new recipe I found and of course there is nothing that can compare to a hot bowl of potato soup.  You might want to try a hot bowl of French onion soup.  This is quite a simple soup to make. Use about three medium onions cleaned and chopped. Add them to a broth mixture of beef broth and beef bouillon cubes.  You may have to try this until you achieve the taste you want.  When the onions are soft place the broth and onions is a pottery soup bowl. Cover the top of the soup with bread cubes and then sprinkle chopped mozzarella over the cubes.  Place in microwave until the cheese is melted. Serve immediately while hot and it is delicious served with a good Italian salad.  
 
Nothing will ever beat the basic tomato soup and grilled cheese sandwich.  Just a reminder to take a nice walk this fall and rake up a pile of leaves and take the kids and let them roll in them.  No better way to celebrate fall.
